A balloon safari begins in the dark. You are collected from camp before first light, and by the time the burners roar the balloon upright, the eastern sky is already turning gold. Then the ground simply falls away, and for an hour you drift wherever the morning breeze decides — sometimes skimming the grass, sometimes climbing to a thousand feet for the full sweep of the plains.

What you see depends on the season and the luck of the wind: hippos returning to their pools, giraffe moving like slow ships through the acacia, lion prides finishing a night's hunt, and in migration season, columns of wildebeest stretching to the horizon. Your pilot is also a trained guide, narrating the landscape as it unfolds.

The tradition that follows is pure safari romance: a full champagne breakfast laid out on the grass wherever the balloon happens to land, cooked fresh and served at linen-dressed tables in the bush. Balloon flights operate from the central Serengeti year-round, and seasonally in the north (Kogatende) and south (Ndutu) to follow the herds.
